Thanksgiving is about celebrating the coming together of family, friends and, of course, food. Instead of sticking to the same repetitive Thanksgiving meal, use the leftover food to create some of these recipes.

Cook onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally. Stir in chicken broth, water and dressing mix. Bring to boil. Add turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.

Prepare stuffing mix as directed on package, using only 3 Tbsp. margarine. Set aside. Place one toast slice on each of six individual plates. Top evenly with turkey, stuffing and gravy. Microwave to reheat, if desired. Microwave, one serving at a time, on HIGH 30 sec. or just until warmed.
Turkey and Broccoli Casserole (about.com)

Preheat oven to 350-¦F. Add hot water to stuffing mix; stir just until moistened. Set aside. Mix turkey and broccoli in 2-quart casserole dish or 13x9-inch baking dish. Mix soup and milk until well blended; pour over turkey mixture. Top with prepared stuffing. Bake 30 minutes or until heated through.

In medium bowl combine turkey and dressing. Cover and let marinate in refrigerator for 1 to 2 hours. Drain excess marinade; fold in mayonnaise, lemon juice and onion. To serve, spoon salad into lettuce cups; top with bacon. Makes 4 to 6 servings.
Kentucky Hot Brown (foodnetwork.com)

Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and 6 tablespoons Parmesan. Add egg to thicken sauce, but do not allow to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste. For each Hot Brown, place 2 slices of toast on a metal (or flameproof) dish. Cover the toast with mushrooms and thinly sliced tomatoes, then cover with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross 2 pieces of bacon on top and serve immediately. Stir cubed cooked turkey into canned minestrone or vegetable soup, chili and casseroles.

Any meat left over from a Thanksgiving dinner should be safely frozen and stored to prevent contamination. Correctly freezing Thanksgiving leftovers allows for more flavorful meals after thawing.
First, remove all turkey meat from the carcass and wrap it tightly in plastic wrap or vacuum-sealed plastic bags. Turkey can be refrigerated for three to four days. To freeze, cut the turkey into smaller pieces and place two-cup portions in freezer bags. Remove only from the freezer what will be used.
Leftover stuffing, potatoes and cranberries can be stored in the refrigerator for 2 to 3 days.
Use a thermometer when reheating leftovers to ensure they're safe to eat. Stuffing and other Thanksgiving foods should reach an internal temperature of 165-¦F.
